This delicious meal complements the healthiest of fish with a fruity and tangy punch.
Ingredients
- About 1/8th of a seedless watermelon
- 1/2 of a yellow pepper
- 1/2 cucumber
- Freshly squeezed juice from a 1/2 lemon
- About 6 - 8 leaves of fresh mint
- 4 salmon steaks
Method
Step 1
Finely dice watermelon, pepper and cucumber.
Step 2
Chop and add mint, reserving a couple leaves for garnish.
Step 3
Squeeze in lemon juice and mix well.
Step 4
Grill salmon until cooked throughout (about 10 - 15 minutes)
Step 5
Let cool slightly and spoon salsa over fish.
